The Halwas of
India are rich, dense confections loaded with sugar or honey and ghee.
Serves: 4 - 6
Ingredients :
½ a kg of sweet potatoes, peeled and grated
2 litre of milk
250 g of sugar
4 cardamoms, powdered
2 tbsp of ghee
Method :
Pour the milk into a large, heavy bottomed cooking pan and bring to the boil. Add the grated sweet potatoes and cook till the potato pieces become tender and dissolve in the milk. Add the sugar. Stir in the oil. When the mixture becomes thick, take it off the fire and stir in the cardamom.
Serve chilled.
