The
Assamese have many sweet dishes made of rice flour in combination with fruits and other ingredients. These are known as pithas.
Serves : 6
Ingredients :
1 kg of ripe jackfruit
½ kg of sugar
500 ml of oil or vanaspati
1 kg of rice flour, sieved
Method :
Deseed the jackfruit and sieve it through a soup sieve. Mix the sugar with the sieved fruit. Fold the rice flour gradually into the sugar-fruit mixture. Mix well.
Heat the oil and spoon equal-sized scoops of the batter into it. Deep fry on medium flame till they become neat, round balls. When they turn golden brown, put them on brown paper so that the excess oil is absorbed by the paper.
