Fried Coconut Pitha is a special
Assamese dish. This
Indian dish is made of coconut, sugar and rice flour.
Serves: 4 - 6
Ingredients:
2 cups of desiccated coconut
2 cups of sugar
1 cup of rice flour sieved
1 cup of milk
250 g of oil
Method :
Mix the coconut, sugar and the rice flour together. Pour milk into this mixture and knead it into smooth dough. Divide the dough into equal-sized round balls. Then, flatten each to about half-inch thickness.
Heat the oil in a deep frying pan and fry the pithas on moderate heat till they brown on both sides.
