Fried Chicken
The Indian palate likes it hot and spicy. As such, fried chicken, in its umpteen forms, has always been a favourite.
Serves: 4
Ingredients :
1 medium chicken, cut into 8 pieces
½ cup rice flour
1 egg, beaten
4 flakes of garlic
1 tbsp of lime juice
½ tsp of cumin seeds
½ tsp of coriander seeds
1 ginger piece
4 green chillies
1 tsp of turmeric powder
Salt to taste
Method :
Mix the turmeric and the salt and rub the mixture on the chicken pieces. Allow to stand for 10 minutes. Make a paste of the garlic, coriander and cumin seeds. To the paste, add the ginger and chillies and grind together till smooth. To this masala, add the lime juice and a tbsp of the cooking oil and mix well. Apply the marinade on both sides of the chicken pieces. Marinate for half an hour. Heat the oil till it smokes and then lower the flame. Dip each chicken piece in the beaten egg and roll it in the rice flour. Fry till both sides are golden brown.
Note: Breadcrumbs can be used in place of rice flour.
