India is well worth a try.
Serves: 4 - 6
Ingredients :
1 kg yam, cleaned and cut into square pieces
1 big coconut, grated
2 tbsp of cooking oil
1 onion, chopped
6 flakes of garlic
2 green chillies, chopped
2 tbsp of lime juice
2 bay leaves
1 tsp of fenugreek seeds
1 tsp of turmeric powder
Salt to taste
Method :
Extract milk from the coconut; keep the grated pulp and milk in two separate bowls. Boil the yam. Fry the fenugreek seeds till brown, and add the onion, turmeric powder and salt. When the onions turn pink, add the yam and the coconut milk and stir well. Let the mixture simmer for five minutes. Remove from the fire and just before serving, add the lime juice and the coconut pulp.
Serve with plain boiled rice.
