Coconut Rice
The recipe of this South Indian dish will certainly bring back fond memories for South Indian food enthusiasts.
Ingredients :
1 whole coconut, grated
2 cups uncooked rice, cleaned and washed
2 tbsp of pure ghee
1 tsp of salt
2 cloves
2 cinnamon sticks
2 onions, sliced
Method :
Add two cups of hot water to the coconut and allow to stand for a little while. Blend the mixture in a liquidizer. Keep aside. Heat the ghee and fry the onion till they turn pink. Add the cinnamon and cloves and fry again till the onions turn light brown. Mix the grated coconut, salt and rice together, and add the mixture to the pan; stir well. Cover and cook on a slow fire till the rice is done.
Serve hot with any vegetable or meat curry.
