How to prepare forest beans in tribal spices
Kattumocha is a seasonal, indigenous, forest lentil. It is cooked here in an earthen pot over a wood fire; this cannot be done in most middle-class homes today, but this imparts an added edge to the dish. The lentil dish, which can be served with rice or roti, is cooked in a typical tribal spice mix of coriander, red chili and a paste of shallot and curry leaves, so you could try this with other kinds of lentil. Spices are kept to a minimum in tribal cooking.
