Seasonings in Kerala dishes
Adding fried mustard seeds is the final part of the preparation of most Kerala dishes. Known as Kaduku Varukkal in Malayalam, seasoning adds extra flavor to the dishes. But seasoning is not similar to all dishes, it varies accordingly. General ingredients needed for all dishes are Coconut Oil, Mustard Seeds, Red Chillies and Curry leaves. Additional ingredients will be different according to the dish, like fenugreek will be added for the seasoning of Pulisseri and Sambar.
