Pazham Payasam Recipe for Kerala Onam Sadya

Ingredients

Plantain paste (made of 6 large ripe plantains)
Jaggery – 500 g
Grated coconut - 4 cups
Coconut milk
Coconut cut into small pieces – ½ cup
A few raisins and cashew nuts
Ghee
Cardamom powder ¼ tsp

Method of preparation

Dissolve jaggery in hot water. In a wok, heat three teaspoons of ghee. Add the plantain paste and stir well. Into this, add the coconut milk. Next, add the jaggery syrup by pouring it through a strainer. Stir well and break big-sized paste chunks into small ones. Proceed to add the milk. Once the ingredients start to boil, add the first milk and stir well.
