Nool Puttu/ Idiyappam - traditional Kerala string hoppers
Nool Puttu or Idiyappam is the traditional Kerala string hoppers and is one of the breakfast dishes of Keralites. Also known as Steamed Rice Noodles, Nool Puttu is made with rice flour. Shown here is the recipe and preparation video of Nool Puttu.
Ingredients
Finely grounded and roasted rice powder - 2 cups
Coconut (grounded) - ½ cup
Salt - to taste
Water
How to prepare Nool Puttu or Idiyappam?
Boil water with salt. As the water starts to boil, add the roasted rice powder and make the dough. Then take enough dough to fill the seva nazhi (idiyappam mould) and press it down to fill the pits on the holder plate. Top them up with grounded coconut. You may now place the holder plates inside the vessel for steaming. All it takes is just 3 or 4 minutes to cook the idiyappam or nool puttu in the steamer.
Try this out for your breakfast and it goes well with different types of curries.
