Fish Pathiri - a popular North Malabar dish
Pathiri is a pancake made of rice flour and is the local cuisine among Malabar region in Kerala State of Southern India. Fish Pathiri is a very popular North Malabar dish popular in the areas of Kannur and Thalassery. Here is the recipe and preparation video of Fish Pathiri, a Malabar Cuisine.
Ingredients
Roasted rice powder - 2 cups
Grounded coconut - ¾ cup
Shallots - 8 nos
Fennel - 1 tsp
Fish Filling
Coconut powder
Green chillies - 3
Curry leaves
Ginger - ½
Garlic - 4-5 nos
Onion (big) - 2 nos
Cumin seeds
Red chilli powder - ½ tsp
Turmeric powder - 1 pinch
Salt - to taste
Coconut oil
Fish (sear fish / prawns) - 2 cups
How to prepare Fish Pathiri?
Take a pan, add some water and salt and heat it. Add the roasted rice powder and make the dough. Into this add the already prepared paste made of grounded coconut, shallots and fennel. Mix well and make a ball of it.
Next take some turmeric powder, red chilli powder and salt. Add enough water to make a paste and then spread it over the fish pieces. And fry the fish.
Take another pan, heat some oil and saute pieces of big onion, ginger, garlic and green chillies. Put some curry leaves. Take a break from the sauting and gently break the fried fish into small pieces and remove the bones. Add these to the sauted ingredients and stir gently. Into this, add some amount of grounded coconut-shallot-fennel paste and mix well. Add some more oil, if required and salt.
Next, take a piece of plantain leaf and on it spread a ball of dough already prepared. You may now take some of the cooked ingredients from the pan and place it over the pathiri. Make one more pathiri and place it over the one with the ingredients. Seal the fringes and steam it.
It is a nice bite to go down with something fizzy.
